Grab a big mixing bowl and mix together your mascarpone cheese with the heavy cream.

Using an electric mixer, whip the mascarpone and cream at medium speed for about 2-3 minutes until it gets nice and fluffy.

Gently stir in the amaretto, cherry juice, and vanilla into your creamy mix until everything's well combined.

Take a small bowl and mix the sugar with cherry preserves until they're completely blended together.

Put the sugar-preserve combo into your mascarpone mix and beat it for another minute to get everything mixed up.

Put a layer of ladyfingers across the bottom of a medium-sized dish.

Drizzle or spoon some of the cherry juice and amaretto over the ladyfingers until they're nice and moist.

Sprinkle the chopped cherries all over the soaked ladyfingers.

Spread about half your creamy mascarpone mix on top of the cherries and smooth it out.

Add another layer of ladyfingers, pour the rest of the liquid, add more cherries, and top with the remaining cream.

Sift cocoa powder all over the top and sprinkle with grated dark chocolate.
