Preheat oven to 375°F. Coat a 9x13-inch baking dish evenly with non-stick cooking spray.

Place diced russet potatoes in a large pot and cover with salted water. Bring to a boil and cook for 10 to 12 minutes or until potatoes are just fork-tender. Drain thoroughly and set aside.

In a large mixing bowl, combine sour cream, ranch seasoning mix, whole milk, melted butter, and half of the shredded cheddar cheese. Stir until fully blended and smooth.

Add drained potatoes, sliced smoked sausage, and chopped green onions to the bowl. Season with salt and black pepper. Gently fold all ingredients together until well coated.

Transfer the potato mixture to the prepared baking dish. Sprinkle the remaining cheddar cheese evenly over the top. Bake uncovered in the center of the oven for 30 minutes or until cheese is melted and golden.

Allow to rest for 5 minutes before serving. Garnish with additional green onions if desired.
