01 - 2 pounds ground beef
02 - 1/2 yellow onion, diced
03 - 1 tablespoon minced garlic
04 - 1 packet taco seasoning
05 - 1 can (10 ounces) Rotel tomatoes with green chilies, undrained
06 - 1 can (11 ounces) Mexicorn, drained

07 - 2 cups shredded taco blend cheese
08 - 1 bag (9.25 ounces) Nacho Cheese Doritos, crushed
09 - Sour cream, for topping (optional)
10 - Pico de Gallo, for topping (optional)

# How to Make It:

01 - Preheat oven to 350°F. In a large skillet over medium-high heat, cook ground beef and diced onion until beef is no longer pink. Stir in minced garlic and cook for an additional 30-45 seconds. Drain excess fat from the skillet.
02 - Add taco seasoning, undrained Rotel tomatoes, and drained Mexicorn to the cooked beef. Stir until mixture is thoroughly combined and heated through.
03 - In a 7x11-inch casserole dish, spread half of the beef mixture in an even layer. Sprinkle with half of the shredded taco blend cheese, then add half of the crushed Nacho Cheese Doritos. Repeat the layers with remaining beef mixture, cheese, and Doritos.
04 - Bake uncovered at 350°F for 15 to 20 minutes, or until cheese is melted and casserole is heated through. Remove from the oven and let rest briefly, then top with sour cream and Pico de Gallo if desired before serving.
