Transfer the seasoned chicken and potato mixture into the prepared baking dish and spread evenly. Cover tightly with foil and bake for 35 minutes.

While baking, in a small bowl, whisk together sour cream and milk until smooth.

Remove foil from the baking dish. Evenly distribute the sour cream mixture over the potatoes and chicken. Sprinkle shredded cheddar cheese over the top. Return to the oven and bake uncovered for an additional 15 minutes, until cheese is melted and bubbly and potatoes are fork-tender.
