Cut chicken breasts into 1x1-inch cubes and season with salt and pepper. Heat olive oil in a pan over medium-high heat. Brown chicken on all sides for 5-7 minutes, then set aside.

In the same pan, cook chopped onion over medium heat for 5 minutes until soft and translucent. Add minced garlic and stir for 30 seconds.

Add browned chicken back to the pan. Add rinsed rice, chicken stock, and water. Bring to a boil, then reduce heat to low and cover. Cook for 10 minutes. Add chopped broccoli, stir, cover, and continue cooking until rice is fully cooked.

Preheat oven to 425°F. Stir in milk and 1 cup of shredded cheddar cheese. Sprinkle remaining cheese on top. Transfer pan to oven and bake for 10-15 minutes until cheese is melted and bubbling.
