Whisk together mayonnaise, grated onion, ketchup, pickle relish, yellow mustard, white vinegar, and paprika until smooth. Cover and refrigerate until ready to use.

In a large skillet over medium-high heat, cook the ground beef, breaking it into small pieces. Drain excess grease once cooked.

Add salt, black pepper, garlic powder, and Worcestershire sauce to the beef. Stir until combined and remove from heat.

Lay tortillas flat. Top one half of each tortilla with 2 slices of cheddar cheese, spread the beef mixture evenly among the tortillas, add chopped onions and pickles, and place 2 more slices of cheddar cheese on top. Fold to close.

Heat a large skillet or griddle over medium-high heat. Add olive oil, then cook each quesadilla for 2-3 minutes per side until golden and the cheese is melted.
