# What You’ll Need:

→ For the Chicken

01 - 2 boneless, skinless chicken breasts
02 - 1 tablespoon olive oil
03 - 1 teaspoon paprika
04 - 1/2 teaspoon garlic powder
05 - 1/2 teaspoon onion powder

07 - 1/2 teaspoon salt

→ For the Street Corn

09 - 1 1/2 cups corn kernels (fresh, frozen, or canned)
10 - 1/4 cup mayonnaise
11 - 1/4 cup sour cream or Greek yogurt
12 - 1/2 cup cotija cheese or feta, crumbled
13 - 1 tablespoon lime juice
14 - 1 teaspoon chili powder
15 - 1/4 cup fresh cilantro, chopped
16 - Salt and pepper to taste

→ For the Bowl

17 - 2 cups cooked rice (white or brown)
18 - 1 avocado, sliced
19 - 1/4 cup red onion, thinly sliced
20 - Fresh cilantro and lime wedges for garnish

# Steps to Follow:

01 - Toss the chicken breasts with olive oil and seasonings (paprika, garlic powder, onion powder, chili powder, salt, pepper). Grill or pan-sear for 5–6 minutes per side until fully cooked. Slice into strips.
02 - In a bowl, mix the corn, mayo, sour cream, cotija cheese, lime juice, chili powder, cilantro, salt, and pepper. Stir well to combine.
03 - Divide the cooked rice among bowls. Top with sliced grilled chicken, a generous scoop of street corn, sliced avocado, and red onion.
04 - Garnish with extra cilantro and lime wedges. Serve warm.
