In a bowl, whisk together hoisin sauce, honey, soy sauce, oyster sauce, ketchup, sesame oil, five-spice powder, garlic, ginger, salt, and red food coloring (if using).

Add chicken thighs to the marinade and mix until fully coated. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.

Preheat grill to medium-high heat. Grill the chicken for 5–7 minutes per side, brushing with extra marinade during the last few minutes, until slightly charred and cooked through.

Preheat oven to 400°F (200°C). Line a baking tray with foil and place a rack on top. Lay marinated chicken on the rack and bake for 25–30 minutes, basting with marinade halfway through. For extra caramelization, broil for the last 2–3 minutes.
