Put 12 Ritz crackers bottom side up on a baking sheet covered with parchment paper.

Spoon about 1 to 2 teaspoons of caramel sauce on each upside-down cracker.

Place another cracker on top of each caramel-covered base and push down slightly to stick them together.

Put white chocolate chips and vegetable oil in a microwave-safe bowl. Warm it up in 20-second bursts, giving it a good stir after each one, until it's totally smooth.

Drop each sandwich cookie into the melted white chocolate, making sure it gets covered all over. Pick it up with a fork and let any extra chocolate drip off.

Return the coated cookies to the parchment paper. Right away, sprinkle them with the colorful sprinkles. Let them sit at room temp or pop them in the fridge until the chocolate hardens before you serve them.
