Cajun Chicken with Peppers (Printable Version)

# What You’ll Need:

→ Cajun Seasoning

01 - 1 teaspoon paprika
02 - ¼ teaspoon cayenne pepper
03 - ¼ teaspoon oregano
04 - ¼ teaspoon thyme
05 - ¼ teaspoon salt

→ Chicken

06 - 2 small bell peppers, thinly sliced (or mini sweet peppers)
07 - 4 small chicken breasts
08 - 4 cloves garlic, minced
09 - 6 oz cream cheese, cold, sliced into 8 pieces
10 - ½ cup shredded cheddar cheese

# Steps to Follow:

01 - Combine paprika, cayenne pepper, oregano, thyme, and salt in a small bowl. Mix well.
02 - Preheat oven to 190°C (375°F).
03 - Spread thinly sliced bell peppers on the bottom of a casserole dish. Place chicken breasts on top of the peppers.
04 - Sprinkle the chicken breasts generously with Cajun seasoning. Add minced garlic on top. Place 2 slices of cream cheese on each chicken breast, then top with shredded cheddar cheese.
05 - Bake the chicken uncovered in the preheated oven for 20-30 minutes until fully cooked. Broil for 2 minutes if desired.
06 - Scoop the bell peppers from underneath the chicken and arrange them evenly around and on top of the chicken before serving.
