01 - 3–4 fresh tomatoes, diced small
02 - 1/2 tsp salt
03 - 2 cloves garlic, minced
04 - 1/3 cup fresh basil, chopped
05 - 1/4 tsp ground black pepper
06 - 1 tbsp red wine vinegar or balsamic vinegar
07 - 2 tbsp olive oil
08 - 1 baguette, sliced 1/2 inch thick on a diagonal
09 - Extra virgin olive oil, for brushing
10 - 1/2 cup balsamic vinegar
11 - 3 tbsp brown sugar
12 - Parmesan cheese, optional

# Steps to Follow:

01 - In a bowl, mix diced tomatoes with salt. Let sit for 20–30 minutes, then drain the juice. Add garlic, basil, pepper, vinegar, and olive oil. Gently toss to combine. Let rest for another 20–30 minutes.
02 - Preheat the oven to 400°F. Brush baguette slices with olive oil on both sides. Bake for 5 minutes, then flip and bake for an additional 2–3 minutes until golden.
03 - In a small saucepan, combine balsamic vinegar and brown sugar. Bring to a low boil and simmer for approximately 10 minutes, stirring occasionally, until thickened. Allow to cool slightly.
04 - Spoon the tomato mixture over the toasted bread slices. Drizzle with balsamic glaze. Sprinkle with Parmesan if desired. Serve immediately.
