Toss the flour, cinnamon, salt, brown sugar, baking powder, and baking soda into a big mixing bowl. Give it a good whisk to combine everything evenly.

Mash up the bananas in another bowl, then mix in the melted butter, egg, buttermilk, and vanilla until smooth.

Stir the wet mixture into the bowl of dry ingredients. Don’t overdo it—some lumps are perfectly fine.

Let the mixture sit for around 5 minutes while warming up a griddle or skillet on medium heat.

Lightly grease the hot skillet with butter or oil. Spoon out about a quarter cup of batter per pancake. Cook for a couple minutes, flip once bubbles pop on the surface, then cook another two minutes until golden.

Stack them warm onto a plate. Add syrup, banana slices, or chopped nuts, if you'd like, and dig in!
