Banana Pancakes with Sugar (Printable Version)

# What You’ll Need:

→ Dry Ingredients

01 - 2 teaspoons baking powder
02 - 1 teaspoon ground cinnamon
03 - 1 ½ cups all-purpose flour
04 - 3 tablespoons light brown sugar, packed
05 - ¼ teaspoon salt
06 - ½ teaspoon baking soda

→ Wet Ingredients

07 - 1 ¼ cups buttermilk (can substitute milk with a teaspoon of lemon juice)
08 - 2 tablespoons melted butter
09 - 1 large egg
10 - 1 cup mashed ripe bananas (about 2 big bananas)
11 - 1 teaspoon vanilla extract

→ For Cooking

12 - Oil or butter for greasing the pan

→ Optional Toppings

13 - Maple syrup
14 - Chopped pecans
15 - Slices of banana

# Steps to Follow:

01 - Toss the flour, cinnamon, salt, brown sugar, baking powder, and baking soda into a big mixing bowl. Give it a good whisk to combine everything evenly.
02 - Mash up the bananas in another bowl, then mix in the melted butter, egg, buttermilk, and vanilla until smooth.
03 - Stir the wet mixture into the bowl of dry ingredients. Don’t overdo it—some lumps are perfectly fine.
04 - Let the mixture sit for around 5 minutes while warming up a griddle or skillet on medium heat.
05 - Lightly grease the hot skillet with butter or oil. Spoon out about a quarter cup of batter per pancake. Cook for a couple minutes, flip once bubbles pop on the surface, then cook another two minutes until golden.
06 - Stack them warm onto a plate. Add syrup, banana slices, or chopped nuts, if you'd like, and dig in!

# Additional Notes:

01 - For more sweetness, use bananas that are super ripe and speckled with brown spots.
