# Ingredients You’ll Need:

→ Pasta

01 - 12 ounces uncooked spaghetti

→ Sauce

02 - 2 tablespoons olive oil
03 - 3 cloves garlic, chopped finely
04 - 1 small onion, diced
05 - 15 ounces crushed tomatoes
06 - 3 tablespoons tomato paste
07 - 1 teaspoon white sugar
08 - 1 teaspoon dried oregano
09 - 1 teaspoon dried basil
10 - 1/2 teaspoon kosher salt, adjust to your taste
11 - 1/4 teaspoon fresh ground black pepper
12 - 1/2 teaspoon red pepper flakes, if you want some heat

→ Eyeball Garnish

13 - 12 mini fresh mozzarella balls
14 - 6 pitted black olives, cut in half

# How to Make It:

01 - Bring a large pot of salted water to a boil and cook pasta following package directions until tender but firm. Drain in a colander and put aside.
02 - Pour olive oil into a medium saucepan over medium heat. Cook the garlic and onion for about 2-3 minutes, mixing often until they smell good and onions turn clear.
03 - Pour in crushed tomatoes, add tomato paste, sugar, oregano, basil, salt, pepper, and pepper flakes if you're using them. Stir everything well and let it bubble uncovered for 10-15 minutes. Keep stirring now and then until the sauce gets thick and turns a deep red color.
04 - Take each mozzarella ball and put half an olive on top, cut side down, to make it look like an eye. If you want, add a tiny drop of balsamic glaze or black food color for the pupil.
05 - To make them look creepier, grab a toothpick, dip it in tomato sauce, and draw little red lines on the mozzarella balls so they look like bloodshot eyes.
06 - Mix the drained pasta with the hot sauce until every strand is covered. Dish it out onto plates or a big serving platter.
07 - Place the eyeball mozzarellas on top of the pasta, pushing them down slightly so they seem to be looking up. Spread them out evenly for the best scary look and serve right away.

# Extra Suggestions:

01 - Want a spookier look? Try using black squid ink pasta instead – it'll make the red sauce and white cheese eyes pop even more.
02 - You can cook the sauce a day before. Just warm it up slowly before mixing with fresh hot pasta.
03 - For kids or folks who don't like spice, skip the pepper flakes and go easy on the herbs.
04 - Make extra eyeballs and stick them on toothpicks for fun Halloween appetizers.
05 - Serve with finger-shaped breadsticks to complete your spooky Halloween dinner theme.
