01 -
Bring a large pot of salted water to a boil and cook pasta following package directions until tender but firm. Drain in a colander and put aside.
02 -
Pour olive oil into a medium saucepan over medium heat. Cook the garlic and onion for about 2-3 minutes, mixing often until they smell good and onions turn clear.
03 -
Pour in crushed tomatoes, add tomato paste, sugar, oregano, basil, salt, pepper, and pepper flakes if you're using them. Stir everything well and let it bubble uncovered for 10-15 minutes. Keep stirring now and then until the sauce gets thick and turns a deep red color.
04 -
Take each mozzarella ball and put half an olive on top, cut side down, to make it look like an eye. If you want, add a tiny drop of balsamic glaze or black food color for the pupil.
05 -
To make them look creepier, grab a toothpick, dip it in tomato sauce, and draw little red lines on the mozzarella balls so they look like bloodshot eyes.
06 -
Mix the drained pasta with the hot sauce until every strand is covered. Dish it out onto plates or a big serving platter.
07 -
Place the eyeball mozzarellas on top of the pasta, pushing them down slightly so they seem to be looking up. Spread them out evenly for the best scary look and serve right away.
