Pastry Twists Blackberry Goat Cheese (Printable Version)

# What You’ll Need:

→ Puff Pastry

01 - 2 sheets puff pastry

→ Jam Filling

02 - 2 cups blackberries
03 - ½ cup water
04 - 1 tablespoon lemon juice
05 - ¾ cup sugar

→ Goat Cheese Filling

06 - 8 ounces goat cheese

→ Topping

07 - 2 lemons, zested
08 - 4 teaspoons raw sugar
09 - 2 teaspoons fresh thyme, minced
10 - 1 egg

# Steps to Follow:

01 - Cook blackberries, water, lemon juice, and sugar in a saucepan over medium heat for 20-30 minutes until thickened. Smash the berries and allow the mixture to cool to room temperature.
02 - Thaw the puff pastry for 20-25 minutes. Roll each sheet out on a floured surface into a rectangle. Spread half the goat cheese and jam evenly on each sheet.
03 - Cut each sheet of pastry into 12 strips. Fold each strip in half and twist gently while stretching slightly. Repeat with the second sheet of puff pastry.
04 - Brush the twists with egg wash. Sprinkle the lemon zest, raw sugar, and minced thyme mixture evenly over the top.
05 - Bake the twists on a baking sheet at 400°F (200°C) for 16-18 minutes or until golden brown. Allow to cool before serving.
