Cook blackberries, water, lemon juice, and sugar in a saucepan over medium heat for 20-30 minutes until thickened. Smash the berries and allow the mixture to cool to room temperature.

Thaw the puff pastry for 20-25 minutes. Roll each sheet out on a floured surface into a rectangle. Spread half the goat cheese and jam evenly on each sheet.

Cut each sheet of pastry into 12 strips. Fold each strip in half and twist gently while stretching slightly. Repeat with the second sheet of puff pastry.

Brush the twists with egg wash. Sprinkle the lemon zest, raw sugar, and minced thyme mixture evenly over the top.

Bake the twists on a baking sheet at 400°F (200°C) for 16-18 minutes or until golden brown. Allow to cool before serving.
