Beef Stir Bowl (Printable Version)

# What You’ll Need:

→ Main Ingredients

01 - 1 cup sweet corn, use canned or thawed frozen corn
02 - 2 cups of white rice, ideally leftover from the day before
03 - 3 garlic cloves, finely chopped
04 - 1 tsp freshly cracked black pepper, adjust as you like
05 - 2 Tbsp soy sauce
06 - 2 bell peppers, cut into thin strips (use any color you have, like red or green)
07 - 1 Tbsp oyster sauce (optional for extra flavor)
08 - Sliced green onions and toasted sesame seeds for topping
09 - 1 lb (450 g) ribeye, sirloin, or shabu-shabu beef, thinly sliced
10 - 2 Tbsp honey or brown sugar for a touch of sweetness
11 - 1 egg per plate, fried (optional)
12 - 1 medium-sized yellow onion, sliced thinly
13 - 1–2 Tbsp unsalted butter for richness (optional)
14 - 1 tsp sesame oil

# Steps to Follow:

01 - Combine soy sauce, sesame oil, oyster sauce, black pepper, and honey in a bowl. Whisk everything thoroughly, then keep it ready to use.
02 - In a large skillet, heat some oil over medium-high. Toss in the onion slices and stir them around until soft.
03 - Put the beef into the same pan and cook it briefly until browned. Once done, remove it from the skillet and set it aside.
04 - Using the same pan, add peppers and corn along with butter (if you're using it). Give them a quick stir until the peppers lose some crunch but still keep a little bite.
05 - Toss garlic into the skillet and let it sizzle for about half a minute. Then add the cooked beef and pour in the sauce, stirring till everything is evenly coated. Let it cook for another minute or two.
06 - Shift the beef mixture to the side of the pan to make room. Crack eggs into the open space and fry them, or optionally use another pan for this step.
07 - Spoon hot rice into bowls, then top with the beef and veggies. Add the fried egg (if you're including it) and sprinkle green onions and sesame seeds over the top.

# Additional Notes:

01 - Slice the beef into super-thin pieces so it cooks up quickly.
02 - Using leftover or day-old rice helps keep the dish nice and fluffy.
