Preheat the oven to 375°F. Line a baking sheet with parchment paper.

Heat olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until softened and translucent.

Add minced garlic to the skillet and cook for 1 minute until fragrant, stirring constantly.

Add ground beef to the skillet. Break it apart with a spatula and cook until browned. Stir in ground cumin, paprika, salt, and black pepper. Cook until beef is fully cooked.

Remove skillet from heat and stir in shredded cheddar cheese until melted and evenly blended with the beef.

On a floured work surface, roll out pie crusts. Using a 4-inch round cutter, cut dough into circles.

Place a spoonful of beef and cheese mixture in the center of each dough circle. Fold the dough over to form a half-moon, then seal with a fork by crimping the edges.

Brush the tops of the empanadas with beaten egg for a golden finish.

Arrange empanadas on the prepared baking sheet. Bake in preheated oven for 20–25 minutes, or until golden brown and crisp.
