In a large bowl, mix olive oil, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Add potato wedges and toss to coat evenly.

Sprinkle freshly grated Parmesan cheese over the seasoned potatoes and gently toss until evenly distributed.

Place seasoned wedges skin-side down in a single layer on the prepared baking sheet.
