01 - 4 skinless, boneless chicken breasts
02 - 2 1/2 cups chicken stock or water
03 - 1 1/2 cups uncooked long grain white rice

→ Tzatziki Sauce

04 - 1 teaspoon black pepper
05 - 3 cloves garlic, finely chopped
06 - 1 tablespoon fresh lemon juice
07 - 1 cup plain Greek yogurt
08 - 1 tablespoon dried oregano
09 - 1 teaspoon salt
10 - 1 teaspoon paprika
11 - 1 medium cucumber peeled, seeded, and grated or finely chopped
12 - 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

13 - 2 tablespoons olive oil

# How to Make It:

01 - Get your oven warmed up to 375 degrees Fahrenheit or 190 Celsius.
02 - Lay uncooked rice flat at the bottom of a big baking pan about 9 by 13 inches.
03 - Slowly pour chicken stock or water over the rice without mixing it.
04 - Stir together the cucumber, garlic, dill, paprika, oregano, yogurt, lemon juice, salt, and pepper in a bowl until it's all blended.
05 - Dry the chicken with paper towels then rub olive oil all over each piece.
06 - Put the chicken breasts right on top of the rice in the baking dish.
07 - Spoon the tzatziki sauce over each chicken breast so they're nicely covered.
08 - Cover tightly with foil and bake for 50-60 minutes until chicken is cooked through and rice is nice and soft.
09 - Take the dish out and let it sit uncovered for 5 minutes so the flavors settle.
