Get your oven warmed up to 375 degrees Fahrenheit or 190 Celsius.

Lay uncooked rice flat at the bottom of a big baking pan about 9 by 13 inches.

Slowly pour chicken stock or water over the rice without mixing it.

Stir together the cucumber, garlic, dill, paprika, oregano, yogurt, lemon juice, salt, and pepper in a bowl until it's all blended.

Dry the chicken with paper towels then rub olive oil all over each piece.

Put the chicken breasts right on top of the rice in the baking dish.

Spoon the tzatziki sauce over each chicken breast so they're nicely covered.

Cover tightly with foil and bake for 50-60 minutes until chicken is cooked through and rice is nice and soft.

Take the dish out and let it sit uncovered for 5 minutes so the flavors settle.
