Potato Bacon Bites (Printable Version)

# What You’ll Need:

01 - 2 cups chilled mashed potato leftovers
02 - 1/2 teaspoon onion seasoning
03 - 1/2 teaspoon garlic seasoning
04 - 1 small diced jalapeño (optional)
05 - 1 cup of sharp cheddar, shredded
06 - Salt and black pepper as you like
07 - 1 1/2 cups seasoned breadcrumb mix
08 - 2 beaten large eggs
09 - 1/2 cup regular flour
10 - 12 pieces of bacon
11 - Oil of your choice for frying
12 - Chopped parsley (optional, for decoration)

# Steps to Follow:

01 - Throw the mashed potatoes, cheddar, jalapeño, and both seasonings in a big bowl. Add salt and pepper, then mix until everything blends well.
02 - Scoop out the mixture and mold into 1.5-inch balls. You should end up with around 12.
03 - Grab three bowls. Fill one with flour, another with beaten eggs, and the last with breadcrumbs.
04 - Take each potato ball and roll it in flour, then dip it into the eggs, and finally coat it with breadcrumbs.
05 - Take a slice of bacon and wrap it snugly around each ball, securing it with a toothpick.
06 - Heat oil in a pot or skillet to 350°F (175°C). Fry the bacon-wrapped balls in small batches of 3–4 for roughly 4–6 minutes, until the bacon crisps and becomes golden.
07 - Take them out, let them rest on a plate covered with paper towels. Sprinkle a little parsley on top if you want, and dig in with a tasty dipping sauce!
