Throw the mashed potatoes, cheddar, jalapeño, and both seasonings in a big bowl. Add salt and pepper, then mix until everything blends well.

Scoop out the mixture and mold into 1.5-inch balls. You should end up with around 12.

Grab three bowls. Fill one with flour, another with beaten eggs, and the last with breadcrumbs.

Take each potato ball and roll it in flour, then dip it into the eggs, and finally coat it with breadcrumbs.

Take a slice of bacon and wrap it snugly around each ball, securing it with a toothpick.

Heat oil in a pot or skillet to 350°F (175°C). Fry the bacon-wrapped balls in small batches of 3–4 for roughly 4–6 minutes, until the bacon crisps and becomes golden.

Take them out, let them rest on a plate covered with paper towels. Sprinkle a little parsley on top if you want, and dig in with a tasty dipping sauce!
