Heat your oven to 350°F (175°C). Coat a 13x9-inch baking dish with cooking spray to prevent sticking.

In a big bowl, mix flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and allspice together for half a minute. Create a hole in the middle and put it aside.

In a separate bowl, put white sugar, brown sugar, and eggs. Beat them with your mixer on medium until they look light and fluffy, about 2 minutes. Add in the applesauce, oil, and vanilla, then mix until everything's blended together.

Empty the wet stuff into the hole you made in the dry ingredients. Carefully stir everything together until you can't see any flour. Don't worry if it looks bumpy.

Pour your batter into the greased dish and gently shake it to make the top even. Bake for 30 to 40 minutes in your preheated oven. It's done when you stick a toothpick in the middle and it comes out clean or just a bit moist.

Take the cake out and let it cool on a wire rack. If you're in a hurry, you can stick it in the fridge to cool faster.

In a fresh bowl, mix cream cheese, butter, confectioners sugar, and vanilla. Using clean beaters, start mixing on low until everything's combined. Then turn up the speed and whip until it's light and fluffy. If it's too soft, pop it in the freezer for 3 minutes at a time, stirring between, until it firms up.

Once the cake has cooled down, spread your cream cheese frosting all over the top. Cut into pieces and enjoy.
