Air Fryer Lemon Butter Chicken (Printable Version)

# What You’ll Need:

→ Chicken and Marinade

01 - Zest of 1 lemon (~1 tsp)
02 - 2 tbsp lemon juice
03 - 1 tbsp mayonnaise
04 - 1 tbsp olive oil
05 - 2 large garlic cloves, finely grated
06 - 1 1/2 tsp dried oregano
07 - 3/4 tsp paprika
08 - 3/4 tsp salt
09 - 1/2 tsp black pepper
10 - 640g boneless skinless chicken thighs, cut into bite-sized pieces

→ Lemon Butter

11 - 75g butter, softened
12 - 1 tbsp fresh parsley, very finely diced
13 - 2 tsp lemon juice
14 - 1/4 tsp paprika
15 - 1/4 tsp black pepper
16 - 1/8 tsp salt, or to taste

# Steps to Follow:

01 - In a medium-sized mixing bowl, whisk together the marinade ingredients. Stir in the chicken until evenly coated, cover, and let marinate for 30 minutes at room temperature (if the chicken has just been removed from the fridge).
02 - Thread the marinated chicken onto 4 skewers, leaving gaps at both ends. Ensure the pieces are compact to retain juiciness. Brush any leftover marinade over the skewers using a clean brush.
03 - Place the skewers in the air fryer. Cook at 200°C/400°F for 13 minutes. While cooking, combine the butter ingredients in a small bowl.
04 - After 13 minutes, flip the skewers using tongs and brush over 1/4 of the lemon butter. Cook for 1 minute, flip again, and brush over another 1/4 of the butter. Cook for 1 more minute or until lightly charred and the chicken's internal temperature reaches 165°F/74°C.
05 - Remove the skewers from the air fryer. If the air fryer base is clean, brush over any melted butter before generously brushing the remaining lemon butter on the skewers. For additional tang, squeeze over extra lemon juice if desired.

# Additional Notes:

01 - Avoid using the pith when zesting lemons as it can add bitterness to the dish.
02 - To enhance the lemony flavor, squeeze over additional fresh lemon juice before serving.
03 - If mayonnaise is unavailable, plain yogurt or oil can be used as an alternative binding agent for the marinade.
04 - Marinate the chicken for no longer than 30–60 minutes to prevent it from becoming rubbery.
